The Apollo Tavern is an important restaurant within the Columbia Beach Resort in Pissouri Bay. As part of the recent hotel upgrade, our client asked for a refreshed concept for the main restaurant and bar to align with current dining trends. The design focuses on creating an inviting and flexible space that can adapt to different dining experiences, whether more intimate or social.

Natural materials and finishes are used throughout to create a warm, approachable atmosphere, with Mediterranean influences blending into a more modern, relaxed environment. The revamp of the existing areas is based on the concept of creating a seaside piazza, similar to that found in a traditional fishing village allowing a seamless flow between the dining and bar areas , helping to enhance the overall guest experience.

All the internal dining areas, bar including the kitchen open up fully to the main square which features a new water fountain as part of the heart of the outdoor dining area.
Each space is treated as an independent vendor around a "public square", all internally connected and offering direct access to the square and with sea views throughout.

Working with an existing building and site parameters, new elements such as dome shaped pergolas and the use of frameless glass wine vitrines and white washed stone finish have transformed the spaces it semi open air units.

The new fountain feature at the centre of the square is constructed from pressed stainless steel tanks clad with tiles and composite timber externally. All created off site and connected to an existing water supply thus minimising the demolition works on site.
All soft and hard furnishings have been carefully selected and restored in collaboration with Thesis Interior Design Showrooms
